Serves 4
A tasty nutritious vegetarian rice dish
- Wash Basmati rice, drain and spread onto a tray to dry for approx half an hour
- Heat oil or ghee in a thick bottomed saucepan
- Add Cumin seeds
- Add finely sliced onion and fry for approx 3 minutes
- Add all remaining spices and stir fry briefly
- Add Basmati rice and stir thoroughly. Fry until opaque (approx 4 minutes)
- Add frozen vegetables, salt and then water. Stir
- Bring to the boil and then reduce heat to minimum and cover saucepan with a well fitting lid
- Cook for 20 minutes without lifting lid
- Stir through with fork and then cover and allow to stand for 5 minutes before serving (see Cooking Notes)
Cooking Notes
Please warn guests who are not familiar with this dish to remove whole spices as both cloves and peppercorns are very (spicy) hot |
