Serves 4
800gms cubed Skinless Chicken 2 tblspns Maharajah's Choice Hot Curry Paste3 tblspns Oil 2 medium Onions sliced 400gm can Whole Tomatoes 1 large Green Capsicum, cored, deseeded and cut into squares ΒΌ cup Water Finely sliced red chilli to garnish
- Heat oil in a heavy based saucepan
- Add onions and fry until golden brown
- Add curry paste and water, blend together
- Add pieces of chicken and fry for 3-5 minutes
- Add tomatoes
- Cover and cook for 15 minutes
- Add capsicum and cook uncovered until liquid has evaporated and the chicken is cooked through
- Garnish with finely sliced red chilli
- Serve with boiled Basmati rice and accompaniments of your choice
